Meet Executive Chef Allan Wambaa
Born in Nairobi, Kenya, Chef Allan Wambaa began his culinary journey in his family’s restaurant and trained at top establishments before serving as personal chef to Saudi Arabian royalty. His career has spanned leadership roles from Seattle’s Benaroya Hall and World Trade Center to the Tacoma Convention Center, where he honed his skills in innovation, sustainability, and management.
Since 2011, Chef Wambaa has led Levy Catering at the Oregon Convention Center, Portland’5, and the Expo Center, earning national recognition for his inventive, locally inspired menus, including awards for his signature Kuku Paka. Certified as a Pro-Chef III by the Culinary Institute of America and a Certified Executive Chef by the American Culinary Federation, he is fluent in seven languages and deeply passionate about global flavors and Portland’s vibrant food scene.

PATH Water Bottles
Our PATH water bottle program is driven by our commitment to sustainability and environmental responsibility. We recognized the urgent need to reduce plastic waste and chose PATH water bottles as a solution that aligns with our values. These bottles are distinct in that they eliminate the use of single-use plastic bottles, offering a refillable, BPA-free, and heavy-gauge aluminum alternative. We proudly offer uniquely designed PATH water bottles for purchase in our restaurants, cafés, and catering program. Guests attending events at our center can conveniently refill and reuse these bottles at any of our 19 strategically placed bottle refill stations throughout the venue. It's a small change with a significant impact, reflecting our dedication to a greener and more sustainable future.
Bold Reuse
The Bold Reuse program at the OCC operates seamlessly to reduce waste and promote sustainability. When customers order certain food or beverages, they receive their items in reusable Bold Reuse containers. After enjoying their meals, customers simply return these containers to receptacles conveniently located near our restaurants. The Bold Reuse team then collects the returned containers from a centralized collection area and ensures they are thoroughly cleaned, sanitized, and brought back to OCC for reuse. This closed-loop system not only minimizes waste but also ensures a continuous supply of clean and reusable containers, contributing to our commitment to environmental responsibility and sustainability.

Restaurants and Cafés
Our two Portland Coffee Roasters cafés serve organic coffee, beverages, fresh bakery goods, assorted oatmeal breakfasts, yogurt, and sandwiches. And it doesn’t get more Portland than the Stir Bistro and Lounge, a full-service restaurant with a menu focused exclusively on local flavors and specialties. If you like microbrews, Oregon wine, or homegrown spirits - Stir has it! For heartier appetites, our other restaurant offerings range from delicious burgers to mouth-watering pizza or chicken tenders, all made to satisfy. Enjoy!
